Mom Annalisa's pickles


for a jar 500gr 


2 zucchini medio_piccole 

1 small fennel 

2 stalks of celery 

2 carrots medio_piccole 

6 sprigs of broccoli frozen green 

6 sprigs of cauliflower frozen 

1 cup of apple cider vinegar (or white) 

1 cup of vinegar and sour 

3 glasses of water 

1 cup mixture of apple cider vinegar and sour and 1 cup of water (for broccoli and cauliflower) 

Coarse salt to taste 



Cook for 3-4 minutes broccoli and cauliflower frozen in 1 cup of vinegar and 1 mixed with water and a pinch of salt. Drain and stops cooking with a little 'of cold water. Wash the vegetables and cut only the carrots into slices thin enough. 

Mettele in a pressure cooker with 1 cup of apple cider vinegar, 1 of bittersweet, water and a bit 'of salt. When the pot and 'pressure calculated in 4 minutes and drain without throwing the water and vinegar. 

Stop cooking with cold water. Cut all the vegetables and place them in the jar, alternating (broccoli and cauliflower if they are large integers can be put in the jar). 

Cover with a solution of vinegar and water very hot and close tightly. 

Simmer the pot for at least 15 minutes. Let cool in water for at least 12 hours. 

Stored in a refrigerator
