Roast Beef with apples and cyder (alcohol-free)

Ingredients 

(for 4 people) 

 

1 kg of roast beef adult 

2 apples 

300 ml of cider alcohol-free 

1 carrot 

1 stalk of celery 

8 slices of smoked bacon 

chive 

1 bay leaf 

sage 

1 vegetable stock cube 

nutmeg 

1 tablespoon of rice flour 

1 tablespoon olive oil 

 

Preparation: 

Cook the apples with 1 cup of water and 1/4 cider for 6-7 minutes with the microwave. 

Let cool and whisk until you have a thick sauce. 

Batten the roast with the bacon slices. 

Make a sauce with 1 tablespoon of olive oil and herbs. Add the roast and brown on each side. 

Add the apple sauce and nut; pour in the cider. 

Cook on low heat for at least an hour. 

Remove the roast and cut into slices. 

Thicken the sauce with the rice flour and rearrange the slices of roast. 

Cook for another 10 minutes.
